Recipe: Pudding for Breakfast

Cocoa and Chia Pudding

There’s no shame in starting your day out with chocolate, as long as that meal contains a wonderful variety of healthful nutrients and low sugar content. This pudding is smooth, creamy and very satisfying.

Makes 1 serving


½ avocado

1 TBS chia seeds

1 TBS flaxseeds, ground

2 TBS walnuts

1 TBS cocoa, powdered

1 tsp dried dates

¼ cup coconut or hemp milk (vanilla or plain)

Optional: ½ tsp of vanilla extract


To the coconut milk (or hemp) add the dates, chia seeds and ground flaxseeds. Let sit overnight or for 30 to 50 minutes in the refrigerator. You can use an eight-ounce mason jar. Add this mixture to a blender along with the avocado, cocoa, and walnuts. You may add the vanilla extract here. Blend. Enjoy.
