Beet Greens: Not to be Ignored!
Beets are some of my favorite vegetables to use with patients in my practice. I like to use the whole plant. The root contains a good amount of soluble and insoluble fibers which have been shown to give the immune system a boost, and helps with constipation as well.
The leaves have a very good amount of electrolytes and minerals. They both contain a wonderful amount of iron.
The recipe below is fast and easy. Beet greens cook in about 2 to 3 minutes. Give it a try and let me know what you think.
Beet Greens
Not your average vegetable side dish! Beet greens aren’t often prepared as a regular dish. They are delicious and very nutritious. Beets have a sweet and mild flavor. Great gateway green for those who have shied away from mustard or kale greens.
Ingredients:
Greens from 2 bunches of beets (usually 8 beets)
1/3 cup lemon juice
½ cup dried apricots
½ tsp turmeric
½ tsp crushed red pepper
1-2 TBS Extra Virgin Olive Oil
Salt and pepper to taste
Directions:
Mix chopped greens with apricots. Saute chopped greens and apricots for 2 to 3 minutes in olive oil. While cooking add tumeric, and crushed pepper. Turn heat off and add lemon juice. Season to taste with salt and pepper.
